Every blade we source is selected for its craftsmanship, steel quality, and the reputation of the maker. We visit the shops in person, hold the knives, and talk to the artisans before choosing what to bring back.
Where We Source
Our primary sourcing ground is Kappabashi, Tokyo's legendary kitchen street, where dozens of specialty knife shops line the road. We also visit artisan workshops in Sakai (near Osaka, the historic center of Japanese knife-making), Seki in Gifu Prefecture, and smaller specialty shops we've discovered over multiple trips. Each shop has its own relationships with specific blacksmiths and its own house brands, which means the selection varies dramatically from store to store.

We carry a range of Japanese knife styles including gyuto (chef's knife), santoku (all-purpose), nakiri (vegetable knife), petty (utility), deba (fish), and yanagiba (sushi knife).
